Frontera Bakery Adventure
A warm dry bread baking adventure in the heart of one of the oldest and most scenic little towns on Mexico's Gulf Coast, this one let's you bake your own crocodile bread!
The Panadería Rosa Trejo is likely most famous as the Frontera bakery that sells crocodile-shaped bread. In fact, it's a deeply traditional bakery with deep ties in town, and thus, with connections to the giant surrounding Centla Wetlands,and to the Gulf of Mexico. But more than that, owner Rosa Trejo and her daughter Cristina actually invite visitors in to become bakers for a day.
Bakery experiences starts with the traditional pozol drink. Visitors get a quick history of the bakery and its importance to the local cuisine. Wearing an apron, guests can move right into the production area to earn the secrets of kneading and baking bread. On colder Frontera mornings, it's simply the best place to be. As a symbol of identity, collective memory, and community ties, the bread here was long baked to send off fisherman to the shrimping boats and farmers to the fields.
Visitors also get a chance to shape their own bread, and while it's baking, enjoy a traditional breakfast served with hot chocolate ground in the traditional way. In the end, guests get their bread fresh from the oven, ready to share, or as a tangible souvenir of the experience.
Either way, it's a terrific part of any trip to Frontera. A magical town, it's concise and walk-able. And a bakery that serves breakfast too is a vital stop and a higlight to any stop in Frontera.
