One of the most dynamic and comprehensive Maya cooking (and eating) experiences, this one is a true celebration of the culinary history of Valladolid.

Aldea Xbatun

The Xbatun Village invites you to an authentic Maya culinary experience. The project is set in a real Maya village just to the south of Valladolid. Guests get to enjoy the food, but also participate in its preparation.

Participants prepare four traditional dishes: three meatless appetizers - sikil pak (a thick sauce made with ground pumpkin seeds), encamisado (wrapped in leaves) and dzotobichay (tamale wrapped in chaya leaves) - and a main dish: pibil chicken, cooked underground to give it a unique, unmistakable flavor.

To complete the feast, prepare a dessert with cacao, an ingredient fundamental to Mesoamerican culture.The experience goes beyond the kitchen. Traditional cooks guide you to the village gardens to gather fresh ingredients. This step allows you to understand the importance of the environment and respect for the land. The cooks can teach you step by step through the elaboration and with this orientation, you can prepare it all again. The atmosphere is intimate, full of aromas, colors and flavors.

Participants can also choose between day and evening classes. La Aldea Xbatun is a few minutes south of the city of Valladolid.

The trip direct from the Tren Maya station could be made in some 20 minutes. Most guests will want to spend some time in the town center and from there, a taxi or other car will make the trip a little faster.
