Cocina Ya'axhe

The Cocina Ya'axhe maybe the most important site for visitors to Halacho in Yucatan. The Centro Etnogastronómico offers visitors a unique culinary experience in which food preparation is approached as a spiritual practice that opens participants to the profound meaning of the Maya culture of western Yucatán.

In a special class, participants develop skills which, through the conscious use of traditional ingredients and techniques, allow for a connection with the cultural roots of the sacred land. Learn ancestral culinary techniques, and how to identify and savor the unique nuances of dishes that emerge directly from flavors of the land of the Maya. Each dish is prepared using local products and ingredients, respecting traditional methods of preparation.

Everything is cooked as it was in the past: on a three-stone wood-fired stove, outdoors, and using the underground "píib" oven, a method emblematic of traditional Maya cuisine. Every step, from gathering ingredients to cooking, takes place in the natural environment, surrounded by plant life and with the time necessary to appreciate the processes calmly and respectfully.

Once the food is ready, guests get the opportunity to taste everything prepared, sharing the table and the experience with your companions, in a celebration of the flavor, history, and identity of the Maya people.

The little town of Halacho is just about directly between the stations of Maxcanú (Yucatan) and Calkini just to the south in Campeche. Most guests will arrive from either of the two stations. The trip southwest from Mérida takes about 90 minutes. Both ATS and Autobuses Sur make the trip multiple times daily.
