Campesina del Cacao

La Campesina del Cacao is a cocoa and cacao cooperative just outside of Comalcalco in Tabasco in the little town of Tecolutilla. Guests are invited to re-discover the ritual of cacao from cultivation to harvesting, grinding and making your own. Seven of the participating 11 farmers of cacao are women farmers. 

It's a unique sensory experience in a small but charming indoor-outdoor factory setting in the Tabasco countryside. Participants go step by step through the process: from bean selection to manual production. You can taste the still-bitter cacao beans, participate in roasting and shelling them, and then experience the magical moment of grinding and preparing your own chocolate.

Taste traditional drinks like chorote (corn pozol with cacao) and a tremendous variety of regional treats to awaken the senses with textures and ancestral flavors. To end on a high note, you can ask Doña Estela, the factory chef, to prepare an authentic meal prepared from the universe of ancient Tabasco cuisine. The cooperative also participates in catered special events that highlight these traditional foods and especially those associated with the cacao produced in the region. Their line of cocoa-related products and finished chocolates is not just impressive, but illuminating in its presentation within the agro-forestry complex where tours and events are hosted. 

The cooperative is a model for sustainable production and environmental leadership in protecting the environment while providing for the needs of producers and their families. They're a part of the Rainforest Alliance to protect the forest ecosystems from which the cacao is harvested, and to better preserve them for the future. 

Most guests arrive to the complex after a visit to nearby towns like Tecolutilla or Comalcalco and from which transport can easily be found. From the center of Tecolutilla, a taxi can get you to La Campesina in about 10 minutes. The trip from Comalcalco is more like 20 minutes and most buses from Villahermosa will only get you about that far.
