Maní, with flavor is an authentic culinary experience in the heart of Yucatan. Maní is a small town one hour south of Merida, and it's filled with life and traditional practices, ancient wisdom and know how.
The KoobenRestaurant, already the home of the best in traditional Yucatec cuisine, invites guests to participate in the preparation of some of the region's most representative dishes. These can include cochinita pibil, Poc Chuc, mucbipollos, and huevos encamisados.
The space is a traditional Mayan kitchen, all within view of diners so that they can see every stage of the culinary process. The stove of three stones and fueled by firewood is the same as that used by the ancestors of the people of the region. Each dish is thus imbued with the deep and characteristic flavor unique to this part of the world. Tortillas are made with local nixtamalized corn, further highlighting the value of the cuisine as a living heritage of the Maya people.
The invitation is not just to savor the food, but also to learn, observe, and reconnect with the culture through its most intimate flavors, practices and traditions.
