The traditional Maya chocolatiers at Caricoa invite guests to visit and take part in the world of artesanal chocolate in Tekax. Visitors get to learn about each step of the production process, from the selection of raw materials to the creation of a delicious treat at the end.

The whole process is informative, but also interactive and sensory. Participants learn about the origins of the cacao and how to distinguish its unique characteristics. You can then move on to the roasting stage, using a comal the traditional Mesoamerican roasting pan. This process brings out the intense aromas of the beans. The manual grinding of the ingredients lets you create the chocolate base paste.

But probably the best part is pouring the final mixture into the molds. More than a cooking class, participants witness just how family knowledge, patience, and respect for the land come together in every chocolate treat. Guests can take home the chocolate they've made themselves as an authentic example of the culinary heritage of the Yucatan. Plus the workshop itself is a veritable museum of information and learn about the long tradition and craft of chocolate making. 

A visit to the Caricoa workshop is a highlight of any visit to Tekax, but especially for families with kids. The chocolate shop is some 15 minutes walking from the very town center and guests get a full appreciation for working and living in the town's traditional center, in an indoor-outdoor setting with lots of natural light and fresh air.
